LUSH Strawberry Shrub

To celebrate LUSH, our new, limited-edition strawberry vinegar made in collaboration with Oishii, our Chef in Residence, Noreen Wasti, has shared the recipe for a sweet, refreshing strawberry shrub.

"Shrubs are concentrated syrups made with fruit, sugar, and vinegar. The term shrub is derived from the Arabic word sharbah meaning drink. And while shrubs have seemed to surface only recently, they’ve actually been around for centuries as a means of preserving fruits."

Ingredients

"This recipe is all about strawberries and if you’re like me, you buy them in total abundance during the summertime. With Brightland + Oishii’s strawberry vinegar, which is so incredibly beautiful, this shrub is pure strawberry fields forever magic. The vinegar is made from the coveted Omakase Berries — so special!" -Noreen

Instructions

  • 1 Place the strawberries and sugar in a large bowl, mix well.
  • 2 Cover with a tea towel and let rest on the counter for 24 hours.
  • 3 After 24 hours, strain the syrup from the strawberries over a bowl with a sieve or cheesecloth. Use a fork or masher to gently crush the strawberries so that all the juices are released. Discard the strawberries or save for a cake or crumble at a later time.
  • 4 Add the Brightland + Oishii LUSH strawberry vinegar to the syrup and stir.
  • 5 Transfer the shrub to a clean bottle using a funnel and store in the fridge.
  • 6 Enjoy with 1 part shrub / 2 parts seltzer water over ice, a sprig of thyme, and a squeeze of lime or as a syrup in your favorite cocktail.
  • 7 Notes: The shrub can be used immediately, but I highly recommend letting it rest for at least 5 days so that the vinegar notes are more pronounced.
