Bryant Terry’s Green Rice

Brightland's Chef in Residence, Noreen Wasti, adapted one of our favorite go-to recipes, Bryant Terry's Green Rice, with the addition of our ARISE basil olive oil for an herbaceous twist. Intensely green, fluffy and fragrant, this rice dish is lovely for a simple, comforting dinner.

Ingredients

  • 1 cup tightly packed spinach leaves, stems removed
  • 1 cup tightly packed kale leaves, stems removed
  • 1 1/2 cups water
  • 2 tablespoons full-fat coconut milk
  • 1 teaspoon kosher salt
  • 1 cup basmati rice
  • 1 Tbsp Brightland ARISE basil olive oil, plus more for drizzling
  • 1/2 cup finely diced yellow onions
  • 1/2 cup diced green peppers
  • 3 cloves garlic, peeled and minced
  • 2 Tbsp sesame seeds, toasted
  • 1/4 cup chopped cashew nuts, toasted

"This incredible green rice recipe by Bryant Terry is delicious, lush, and verdant. The rice gets cooked in a vibrant green juice along with onion, green peppers, and garlic that have been sweated out in ARISE. The basil elements of ARISE work perfectly here to bring forward all the herbaceousness of this dish. Serve with any crunchy nuts and seeds as a topping, alongside your favorite protein, or just in a big bowl on its own (with a few extra drizzles of ARISE, of course). So good." - Noreen

Instructions

  • 1 In a blender, combine the spinach, kale, water, coconut milk, and salt, and puree until smooth. Set aside.
  • 2 Rinse and drain the rice well. Set aside.
  • 3 In a medium saucepan over medium heat, warm the ARISE oil until shimmering. Add the onion and bell pepper and sauté until soft, about five minutes. Add the garlic, and cook, stirring often, until fragrant, 2 to 3 minutes. Stir in the rice and cook for a minute or two, toasting a bit.
  • 4 Raise the heat to high, pour in the contents of the blender, and bring to a boil. Immediately reduce the heat to low, cover, and simmer until the rice is tender and most of the liquid has evaporated, 15 to 20 minutes.
  • 5 Remove from the heat and set aside to steam for 10 minutes. Fluff the rice with a fork.
  • 6 Finish with toasted sesame seeds, cashews, and a generous drizzle of ARISE.
