Brightland's Chef in Residence, Noreen Wasti, has shared the ultimate summer salad to highlight LUSH, our new, limited-edition strawberry vinegar. Light, sweet and perfectly punchy, this salad is ideal for summer days that are too hot to cook in an oven.
Ingredients
- 2 Tbsp Brightland + Oishii LUSH strawberry vinegar
- 1 Tbsp Brightland ALIVE olive oil, plus more for finishing
- 1/2 of a large cantaloupe, seeded, rind removed, and sliced in thin spears
- 1 shallot, thinly sliced
- 4 ounces feta cheese, crumbled
- Tajin, to taste
- Flaky salt, to taste
- Fresh cilantro and mint leaves, to garnish

Instructions
- 1 In a small bowl, whisk Brightland + Oishii LUSH strawberry vinegar and ALIVE olive oil with a pinch of salt until emulsified, taste for seasoning.
- 2 Place cantaloupe spears on a serving platter and top with shallots and feta cheese.
- 3 Drizzle the oil and vinegar emulsion on top.
- 4 Season generously with flaky salt and Tajin (I like about one tablespoon of Tajin!)
- 5 Garnish with cilantro and mint leaves and finish with a drizzle of ALIVE olive oil.
