Poached Pears with Whipped Cream & Dark Chocolate

To celebrate the restock of LUSH, our limited-edition strawberry vinegar made in collaboration with Oishii, our Chef in Residence, Noreen Wasti, has shared the recipe for decadent, striking poached pears.

For the Pears

Ingredients

  • 2 lbs pears, peeled with stems kept intact (feel free to use an assortment of pears - seckel, forelle, bosc, and red anjou are great options)
  • 3/4 cup sugar
  • 1 vanilla bean, split
  • 1 cinnamon stick
  • 2 strips of orange peel
  • 1/2 cup of Brightland + Oishii LUSH strawberry vinegar
For the Whipped Cream

Ingredients

  • 1 cup heavy whipping cream
  • 1 tsp sugar
  • 1 tsp vanilla extract
For the assembly

Ingredients

  • Poached pears
  • Reserved pear syrup
  • Whipped cream
  • 1.5 ounces dark chocolate, finely chopped
  • Brightland AWAKE olive oil, to drizzle
  • Flaky salt

Instructions

  • 1 Slice the bottoms off the pears so that they sit flat.
  • 2 In a deep sauté pan, add the pears, sugar, vanilla bean, cinnamon stick, orange peels, LUSH, and enough water to completely cover the pears.
  • 3 Bring pears to a simmer over medium heat. Cover with a plate to keep the pears submerged under the water if needed.
  • 4 Poach pears until fork tender, but not mushy, about 30 minutes depending on the size of the pears.
  • 5 Remove pears from the liquid and set aside to let cool.
  • 6 Remove half of the liquid from the saucepan and discard. Bring remaining liquid to a boil until slightly syrupy, about 10 minutes.
  • 7 Remove the vanilla bean, cinnamon stick, and orange peel from the syrup and let cool.
  • 8 Make the whipped cream: with a mixer or by hand with a whisk, whip the cream, sugar, and vanilla until stiff peaks form.
  • 9 To assemble, place the pears on a serving dish and pour the syrup over them. Spoon dollops of whipped cream on top and sprinkle with dark chocolate. Drizzle generously with AWAKE olive oil and finish with a dash of flaky salt. Enjoy immediately.
