To celebrate the restock of LUSH, our limited-edition strawberry vinegar made in collaboration with Oishii, our Chef in Residence, Noreen Wasti, has shared the recipe for decadent, striking poached pears.

For the Pears
2 lbs pears, peeled with stems kept intact (feel free to use an assortment of pears - seckel, forelle, bosc, and red anjou are great options)
Slice the bottoms off the pears so that they sit flat.
In a deep sauté pan, add the pears, sugar, vanilla bean, cinnamon stick, orange peels, LUSH, and enough water to completely cover the pears.
Bring pears to a simmer over medium heat. Cover with a plate to keep the pears submerged under the water if needed.
Poach pears until fork tender, but not mushy, about 30 minutes depending on the size of the pears.
Remove pears from the liquid and set aside to let cool.
Remove half of the liquid from the saucepan and discard. Bring remaining liquid to a boil until slightly syrupy, about 10 minutes.
Remove the vanilla bean, cinnamon stick, and orange peel from the syrup and let cool.
Make the whipped cream: with a mixer or by hand with a whisk, whip the cream, sugar, and vanilla until stiff peaks form.
To assemble, place the pears on a serving dish and pour the syrup over them. Spoon dollops of whipped cream on top and sprinkle with dark chocolate. Drizzle generously with AWAKE olive oil and finish with a dash of flaky salt. Enjoy immediately.
