20-Minute Creamy Pesto Chicken & Broccoli Tortellini

This quick and comforting weeknight dinner is bursting with flavor. Tender chicken, cheese-filled tortellini, and crisp broccoli simmer in a creamy basil pesto sauce, then finished with lemon zest and parmesan. Paired with a bright arugula salad dressed in Brightland’s Parasol vinegar and Everyday Salad Oil, this meal delivers freshness and richness in just 20 minutes.

Ingredients

For the tortellini:

  • 1 tablespoon Brightland Everyday Cooking Oil
  • 2 cloves garlic, minced
  • 1 lb. chicken breast, cut into bite-sized cubes
  • 1 teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper
  • ⅓ cup basil pesto
  • 1 cup low-sodium chicken broth
  • 1 cup half and half
  • 20 oz. cheese or spinach tortellini
  • 3 cups broccoli florets, roughly chopped
  • Zest of 1 lemon
  • ½ cup finely grated parmesan cheese, plus more for serving
  • Sliced fresh basil leaves for serving

For the salad:

  • ¼ cup Brightland Everyday Salad Oil
  • Juice of ½ lemon
  • 1 tablespoon Brightland Parasol Champagne Vinegar
  • ½ teaspoon dijon mustard
  • ½ teaspoon honey
  • ¼ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper
  • 4 cups arugula

Instructions

  1. Heat Brightland's Everyday Cooking Oil in a large, deep skillet over medium heat. Add the garlic, cubed chicken breast, salt, and pepper. Cook, stirring occasionally, for about 5 minutes until the chicken is opaque.
  2. Add pesto, chicken broth, and half and half and stir to combine. Stir in the tortellini. Cover the skillet with a lid, turn the heat to medium-low, and cook for 3 minutes. Stir in the chopped broccoli, cover, and cook for another 3 minutes.
  3. Make the salad: To a mason jar, add the Everyday Salad Oil, lemon juice, dijon mustard, honey, salt, and pepper. Shake vigorously to combine. Add the arugula to a mixing bowl and toss with the dressing.
  4. Remove the skillet from the heat. Stir in the lemon zest and parmesan cheese. Taste and add more salt and pepper if desired.
  5. Serve the tortellini in shallow bowls with the salad on the side. Top with more grated parmesan cheese and dive in!
