Slow Roasted Salmon with Sumo Citrus Salsa Verde

Ingredients

  • 1lb salmon filet
  • 1 Sumo Citrus
  • 1 lemon
  • 1 blood orange (optional)
  • 3 tbsp Brightland Everyday Cooking Oil
  • 1 cup picked cilantro leaves (about half a bunch)
  • 1 cup picked parsley leaves (about half a bunch)
  • 1-2 garlic cloves
  • 1 tbsp capers, drained
  • 1 tbsp Brightland Champagne Vinegar 
  • ¼ cup Brightland x Sumo Citrus Olive Oil, plus more for drizzling
  • Kosher salt and black pepper

Instructions

  1. Preheat oven to 300℉. Prepare a parchment lined baking sheet. 
  2. Season salmon filet generously with kosher salt and black pepper on both sides and arrange it skin side down on the parchment. Drizzle 2 tsp of Brightland Everyday Cooking Oil over the top.
  3. Thinly slice half of Sumo, lemon and blood orange (if using) into rounds. Arrange on top of the salmon filet. Save the other halves for later. 
  4. Drizzle the remaining tbsp of the Brightland Everyday Cooking Oil on top of the citrus. 
  5. Place the baking sheet in the oven and roast for 20-25 mins, until the fish is starting to turn opaque 
  6. While the salmon roasts, make the Sumo Citrus salsa verde. 
  7. Finely chop both the cilantro and parsley and add them into a mixing bowl.
  8. Grate 1 clove of garlic into the mixing bowl. Chop the capers and add them in. Squeeze in the juice from the other half of the Sumo and add in the Brightland Champagne Vinegar. 
  9. Mix and season to taste with kosher salt and black pepper. Add more oil, vinegar or garlic as needed. The sauce should be very bright and punchy!
  10. Remove and discard cooked citrus slices from the top of the fish (or save for garnish). Serve fish with sauce spooned on top, extra sauce on the side and a squeeze of fresh lemon (from the reserved lemon half).
