Ingredients
16 oz feta cheese in brine, cubed
1 large shallot, quartered
3-4 long strips of lemon rind
3 sprigs of fresh oregano
3 sprigs of fresh thyme
1/4 cup fresh basil leaves, roughly chopped
1/2 teaspoon black pepper, or to taste
1/2 teaspoon red pepper flakes, plus more if desired enough olive oil to cover the feta, about 1 cup
2 tablespoons balsamic vinegar
Instructions
In a clean glass jar, add the cubed feta, lemon rind, herbs and spices. Cover to the top with the olive oil then add the balsamic.
Seal the jar and refrigerate 4 hours or up to overnight. Enjoy with grilled pita, crispy garlic, cucumbers, tomatoes and olives.
