Roasted Chicken With Cooked Orange Onion Slaw Salad

A cozy, seasonal roast made for slow winter nights, this dish is comforting, nourishing, and full of bright citrus flavor, all cooked entirely with Brightland’s Everyday Cooking Oil.

Ingredients

For the Roast Chicken

  • 3 oranges, sliced
  • 1 lemon, quartered
  • 3 leeks, trimmed, washed, and sliced into half circles
  • 1 whole chicken (about 3 lbs)
  • 6 tablespoons salted butter, cut into pieces
  • Castelvetrano olives (to taste)
  • Brightland Everyday Cooking Oil
  • Kosher salt
  • Freshly cracked black pepper

For the Citrus Cabbage Slaw

  • 1 navel orange, thinly sliced
  • 1 small onion, thinly sliced
  • ½ head green cabbage, thinly sliced
  • 2 tablespoons butter
  • Brightland Everyday Cooking Oil
  • Brightland Everyday Salad Oil
  • Flat-leaf parsley
  • Freshly grated Parmesan cheese
  • Kosher salt
  • Freshly cracked black pepper

Instructions

  1. Preheat oven to 425 degrees
  2. Add sliced oranges, lemon and leeks to the bottom of a 9x13 in baking pan
  3. Rinse and dry your chicken, and place over your citrus and vegetables
  4. Layer on the salted butter cut into individual pieces, and as many castelvetrano olives as you’d like
  5. Douse everything throughly with Everyday Cooking Oil. Season with lots of salt and freshly cracked pepper.
  6. Bake until internal temperature is 170 degrees, an hour roughly.
  7. While the chicken is baking, prepare the salad. Heat a large pan and add butter, and lots of Brightland Cooking Oil.
  8. Sauté sliced orange and onion until caramelized, tender, and fragrant.
  9. Place cabbage in a large bowl and layer cooked orange and onion. Add flat leaf parsley, and tons of freshly grated parmesan cheese.
  10. Douse in Everyday Salad Oil for your dressing, and season with salt and freshly cracked pepper. This gets better with age!!!
  11. To plate, top slaw with chicken, its juice, and the cooked leeks and olives. Best bites!
