In the final cozy days before Christmas, this is what we’re making. A seasonal broccoli quiche made with Everyday Cooking Oil — warm, unfussy, and made for gathering. Topped with our herby Pizza Oil, adding the perfect amount of spice and heat for a savory finish.
Ingredients
Broccoli, shaved or very thinly sliced
Brightland Everyday Cooking Olive Oil
1 teaspoon salt, plus more to taste
Freshly cracked black pepper
Granulated garlic
Honey
2 large eggs, room temperature
4 oz parmesan or cheddar cheese, shredded or grated (plus more for topping)
¾ cup all-purpose flour
1 cup whole milk

Instructions
Preheat oven to 425. Shave / slice thin very small pieces of broccoli and coat generously in Everyday Cooking Oil.
Now coat in salt, pepper, granulated garlic, and a drizzle of honey. Bake for 12 minutes while you prepare your batter.
Whisk two large room temp eggs. Add in your cheese of choice, AP flour, 1 tsp salt, lots of fresh cracked pepper, whole milk, and your cooked broccoli.
Pour batter into a well greased 8 inch pie plate or cake pan lined with parchment. Bake for 30 minutes until nicely browned and bubbled up.
Remove and top with more cheese, pepper, and my favorite brightland product - pizza oil. This holds the perfect amount of spice and heat for anything savory you make, and elevates the flavors perfectly.
