May's BrightRX is dedicated to spring snacking cakes. As the days get warmer, treat yourself by bringing the picnic home. Enjoy these light, delectable cakes for a special morning, sweet afternoon, or jazz them up for dessert.
Brightland Snacking Cake
- 1 ¾ cups all-purpose flour
- ½ cup sugar
- 4 teaspoons baking powder
- 1 tablespoon cinnamon
- ½ teaspoon salt
- 1 cup blueberries (or more if you'd like!)
- 1 cup milk
- ¼ cup Brightland’s ALIVE
- 2 eggs
- 2 tablespoons sugar
- 1 teaspoon cinnamon
Preheat oven to 375°F. Grease square baking pan.
In a bowl, combine the flour, sugar, baking powder, cinnamon and salt.
In another bowl, beat together the milk, Brightland, and eggs. Make a well in the center of the dry ingredients and add the wet ingredients. Stir just until combined - don’t overmix.
Add blueberries into the mixture.
Pour mixture into square baking pan.
In a small bowl combine the 2 tablespoons of sugar and 1 teaspoon of cinnamon. Sprinkle the cinnamon sugar mixture over the top of the mixture.
Bake the cake until a toothpick instead in the center comes out clean, 30-40ish minutes.
It’s lovely with a dollop of creme fraiche.
Delicious for breakfast with some blueberry (or strawberry!) jam
