Cinnamon Olive Oil Cake

  • Cinnamon Olive Oil Cake

As the days get warmer, treat yourself by bringing the picnic home. Enjoy these light, delectable cakes for a special morning, sweet afternoon, or jazz them up for dessert. We asked our friend Alexa Buckley, founder of Margaux, a footwear company in New York, to share her favorite snacking cake.

Ingredients

  • 2 cups almond flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon fine-grain sea salt
  • 1/2 teaspoon ground cinnamon
  • 4 eggs
  • 1/2 cup maple syrup
  • 1 tsp vanilla
  • Zest of 1 lemon
  • 1/4 cup of Brightland Alive Extra Virgin Olive Oil

Instructions

  1. Preheat the oven to 325 degrees. Grease a 10-inch cake pan with olive oil.
  2. In a large mixing bowl, mix together the almond flour, baking soda, salt, and cinnamon.
  3. In another bowl, combine the eggs, maple syrup, olive oil, vanilla and lemon zest. Use a whisk to mix well. Pour the wet ingredients into the dry. Stir until combined, and then pour the mixture into your pan.
  4. Bake for 30 minutes... and enjoy with morning coffee, as an afternoon snack, or with a dollop of vanilla bean ice cream for dessert!
