BrightRx: Cinnamon Olive Oil Cake

May's BrightRx is dedicated to spring snacking cakes. As the days get warmer, treat yourself by bringing the picnic home. Enjoy these light, delectable cakes for a special morning, sweet afternoon, or jazz them up for dessert. We asked our friend Alexa Buckley, founder of Margaux, a footwear company in New York, to share her favorite snacking cake.

Ingredients

  • 2 cups almond flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon fine-grain sea salt
  • 1/2 teaspoon ground cinnamon
  • 4 eggs
  • 1/2 cup maple syrup
  • 1 tsp vanilla
  • Zest of 1 lemon
  • 1/4 cup of Brightland ALIVE olive oil

Instructions

  • 1 Preheat the oven to 325 degrees. Grease a 10-inch cake pan with olive oil.
  • 2 In a large mixing bowl, mix together the almond flour, baking soda, salt, and cinnamon.
  • 3 In another bowl, combine the eggs, maple syrup, olive oil, vanilla and lemon zest. Use a whisk to mix well. Pour the wet ingredients into the dry. Stir until combined, and then pour the mixture into your pan.
  • 4 Bake for 30 minutes... and enjoy with morning coffee, as an afternoon snack, or with a dollop of vanilla bean ice cream for dessert!
