Spiced Grilled Chicken Thighs

Warmer weather has arrived, and so has our new Summer BBQ Capsule. Our Chef in Residence, Noreen Wasti, developed the quintessential summer grilling recipe with our new capsule: spiced grilled chicken thighs, perfect to celebrate the return of warmer nights and backyard dinner parties.

"Grilling season is here! I really believe in the power of the open flame when it comes to cooking. There is just something about the flavors achieved from grilling that you can’t get on the oven or stovetop. This recipe is perfect for a simple dinner on a warm evening and comes together quite easily with Brightland’s BBQ Capsule. Boneless skinless chicken thighs are marinated in a mixture of harissa, yogurt, grated garlic, Brightland’s AWAKE, RAPTURE, and TERRAIN spice blend (which literally has all the seasonings you need). The chicken thighs are grilled till charred and tender — peppery with the perfect amount of heat and acid. You can serve these chicken thighs alongside some yogurt and pitas, throw in some butter lettuce, hot sauce, and any other accouterments you like and you’ve got yourself a delicious DIY pita situation!" - Noreen Wasti

  • 1 In a shallow dish or bowl, combine the harissa, yogurt, AWAKE olive oil, RAPTURE vinegar, grated garlic, TERRAIN, and salt. Mix well until combined.
  • 2 Add the chicken thighs and toss well in the marinade until completely coated. Cover and transfer to the refrigerator. Let the chicken marinate for two hours.
  • 3 Once you’re ready to cook the chicken, preheat the grill to medium-high (375-400 F).
  • 4 Grill the chicken until charred and browned, about 6-8 minutes per side. Use a meat thermometer to register an internal temperature of 165 F to ensure the chicken is cooked fully.
  • 5 Remove the chicken from the grill and let rest for 5 minutes before serving.
  • 6 Serve alongside yogurt and warm pitas. Option to drizzle the yogurt with AWAKE olive oil and a sprinkle of TERRAIN.
