Sumac Lemon Pepper Chicken & Roast Potatoes with Lemony Yogurt Dip

Ingredients

For the Sumac Lemon Pepper Chicken

  • 2 boneless, skinless chicken breasts
  • 1 tbsp Brightland Everyday Cooking Oil
  • 1 tbsp butter
  • 1½ tsp Burlap & Barrel Sumac Lemon Pepper
  • ½ tsp salt1 lemon (zest + juice)
  • ¼ cup chicken broth (or water)

For the Roasted Potatoes

  • 1 lb baby potatoes, halved
  • 2 tbsp olive oil
  • 2 tsp Burlap & Barrel Sumac Lemon Pepper
  • ½ tsp salt
  • Cracked black pepper to taste

For the Lemony Yogurt Dip

  • ½ cup Greek yogurt
  • 1 tbsp Brightland Lucid Lemon Olive Oil
  • Pinch Burlap & Barrel Sumac Lemon Pepper
  • Squeeze of fresh lemon juice
  • Salt to taste

Instructions

  1. Preheat oven to 425°F / 220°C.
  2. Toss halved potatoes with olive oil, Burlap & Barrel Sumac Lemon Pepper, salt, and cracked black pepper. Spread on a baking sheet and roast until golden and crisp, about 20 minutes.
  3. While the potatoes roast, pat chicken dry and slice each breast in half horizontally to create two thin cutlets. Season both sides with Sumac Lemon Pepper and salt.
  4. Heat Brightland Everyday Cooking Oil and butter in a large skillet over medium-high heat. Add chicken and cook until golden and cooked through, about 4–5 minutes per side.
  5. Add chicken broth and lemon juice to the pan and simmer for 1–2 minutes, scraping up any browned bits. Spoon the sauce over the chicken when serving.
  6. In a small bowl, stir together Greek yogurt, Brightland Lucid Lemon Olive Oil, a pinch of Sumac Lemon Pepper, lemon juice, and salt.
  7. Serve the chicken alongside the roasted potatoes with the lemony yogurt dip.
