Lemon Spaghetti with Arugula and Basil

This bright, citrusy spaghetti is the kind of pasta that feels made for spring. Garlic, chili flakes, lemon, arugula, and parmesan come together in a simple, vibrant dish, finished with Brightland’s Spring Flavor Duo—a drizzle of Lucid for fresh lemon flavor and Arise for a hint of basil. The result is a light, flavorful pasta that comes together in minutes.

Ingredients

  • 750g (1½ lb) thin or or angel hair spaghetti 
  • 3-4 tablespoons Brightland Everyday Cooking Oil
  • 2 cloves garlic, minced
  • 4 tbsp capers
  • 1½ tsp dried chili flakes or 3 fresh red chillies seeded and sliced 
  • 2 tsp freshly grated lemon zest (feel free to omit and use an extra drizzle of Brightland Lucid olive oil!)
  • 3 tbsp lemon juice
  • 3-4 cups roughly chopped arugula leaves
  • ¾ cup grated parmesan cheese 
  • Cracked black pepper to taste

  • Brightland Arise Basil Olive Oil

Instructions

  1. Cook spaghetti in boiling water until al-dente (approx. 7-9 minutes)
  2. While pasta is cooking, heat olive oil in a large sauce pan over medium-high heat. Add garlic and capers and saute for 1 minute. 
  3. Add chillies, lemon zest and lemon juice to the pan and cook for another minute. Drain pasta and add it to garlic mixture with arugula and parmesan. Drizzle Brightland’s Lucid Lemon Olive Oil to coat the spaghetti noodles and arugula. 
  4. Toss to combine and serve pasta with a generous drizzle of Brightland’s Arise Basil Olive Oil, a sprinkling of black pepper and warm crusty bread.
