Baked Apples with Oat Crumble

“It’s finally fall and baked apples are the quintessential autumnal dessert. Easy to whip up for a crowd or scale down to a single serving, these apples are hollowed out and baked with a filling of oats, cinnamon, cardamom, and AWAKE olive oil until tender. Top with a dollop of whipped cream or scoop of vanilla ice cream to finish and get cozy!” - Noreen Wasti

Ingredients

  • 1/2 cup whole rolled oats
  • 1/2 cup flour
  • 1/4 cup light brown sugar
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground cardamom
  • Pinch of salt
  • 1/4 cup of Brightland AWAKE olive oil, plus more to drizzle
  • 4 apples
  • 1/2 cup apple cider
  • Optional toppings to serve: dollop of whipped cream, scoop of ice cream and edible flowers
   

Instructions

  • 1 Preheat the oven to 375F.
  • 2 In a bowl combine the oats, flour, brown sugar, cinnamon, cardamom, salt, and AWAKE olive oil. Mix well until fully combined with a clumpy texture like wet sand.
  • 3 Core the apples and use a paring knife to create a wide enough hole to fill with the crumble.
  • 4 Transfer the apples to a baking dish and fill with the oat crumble, pack it in until it reaches the top.
  • 5 Pour the apple cider into the baking dish and transfer to the oven. Bake for 45 minutes or until the apples are tender.
  • 6 Serve with a dollop of whipped cream or scoop of vanilla ice cream and drizzle with AWAKE olive oil. Optional to garnish with edible flowers. Enjoy immediately!
