“It’s finally fall and baked apples are the quintessential autumnal dessert. Easy to whip up for a crowd or scale down to a single serving, these apples are hollowed out and baked with a filling of oats, cinnamon, cardamom, and Awake Extra Virgin Olive Oil until tender. Top with a dollop of whipped cream or scoop of vanilla ice cream to finish and get cozy!” - Noreen Wasti

Ingredients

  • 1/2 cup whole rolled oats
  • 1/2 cup flour
  • 1/4 cup light brown sugar
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground cardamom
  • Pinch of salt
  • 1/4 cup of Brightland Awake Extra Virgin Olive Oil, plus more to drizzle
  • 4 apples
  • 1/2 cup apple cider
  • Optional toppings to serve: dollop of whipped cream, scoop of ice cream and edible flowers

Instructions

  1. Preheat the oven to 375F.
  2. In a bowl combine the oats, flour, brown sugar, cinnamon, cardamom, salt, and Awake Extra Virgin Olive Oil. Mix well until fully combined with a clumpy texture like wet sand.
  3. Core the apples and use a paring knife to create a wide enough hole to fill with the crumble.
  4. Transfer the apples to a baking dish and fill with the oat crumble, pack it in until it reaches the top.
  5. Pour the apple cider into the baking dish and transfer to the oven. Bake for 45 minutes or until the apples are tender.
  6. Serve with a dollop of whipped cream or scoop of vanilla ice cream and drizzle with Awake Extra Virgin Olive Oil. Optional to garnish with edible flowers. Enjoy immediately!
