Hearty, summery, and absolutely delicious — with just a handful of ingredients, this simple polenta is excellent for languid summer nights.

Brightland's Chef in Residence, Noreen Wasti, has shared a wonderfully simple recipe ideal for languid, late summer evenings: creamy polenta topped with blistered, garlicky roasted tomatoes.

"This recipe is absolutely perfect for summer entertaining and gatherings — just a handful of ingredients and so simple to put together. Cute little cherry tomatoes are coated in Rosette Garlic Olive Oil (the best combination ever) and roasted in the oven until blistered and juicy. Ingredients

  • 2 pints cherry tomatoes
  • 3 Tbsp Brightland Rosette Garlic Olive Oil
  • Salt & pepper, to taste
  • 1 cup polenta (corn grits)
  • 2 Tbsp unsalted butter
  • 1 cup grated parmigiano reggiano, plus more to finish
  • Fresh basil

Instructions

  1. Preheat oven to 425F.
  2. Place the cherry tomatoes on a baking sheet. Drizzle with Rosette Garlic Olive Oil and season generously with salt & pepper — toss to coat.
  3. Roast for 25 minutes, tossing at the halfway mark, until blistered and juicy.
  4. Meanwhile prepare the polenta* by bringing 4 cups of water with a big pinch of salt to a boil in a medium-size pot.
  5. Once boiling, pour in the polenta, whisking vigorously to combine and reduce the heat to low.
  6. Let the polenta cook for 30 minutes, stirring every 5 minutes (switching to a wooden spoon once it’s too thick to whisk).
  7. Once the polenta has cooked, stir in the butter and grated parmigiano reggiano. Cover with a lid and let sit for 3-5 minutes. Taste for seasoning.
  8. To serve, spread the polenta onto a large platter and top with the roasted cherry tomatoes and all of the reserved juices and oil.
  9. Finish with lots of grated parmigiano reggiano, fresh basil, and an additional drizzle of Rosette Garlic Olive Oil if you’d like. Serve immediately.

Note: Feel free to follow the cooking instructions on the polenta package in case it varies.
